Recognizing that most candies are made by food scientists in laboratories, 28-year-old Arab-American Mayssa Chehata ― Behave founder and CEO ― boldly took on a less explored, culinary-first approach in creating gluten-free candies with the help of celebrity chef and James Beard Award nominee Elizabeth Falkner. Together, they developed three inventive yet accessible flavors for Behave’s gummy bears, including lychee (a classic in French patisserie), passionfruit, and raspberry.
