Copycat Big Mac Sauce Recipe by Mike Haracz
In a viral TikTok video posted in July 2022, Haracz revealed his closely guarded recipe for the iconic Big Mac sauce to his over 315,000 followers.
At the start of the video, Mike urged viewers to disregard the numerous “super-secret” recipes circulating online, emphasizing that his version holds credibility due to his experience as a McDonald’s corporate chef. Before diving into the list of 11 ingredients, he quickly pointed out that ketchup is not part of the recipe.
Mike began by highlighting the main ingredient: mayonnaise. He instructed viewers to add one cup of mayonnaise—specifically Hellman’s—to their mixing bowls to ensure the closest possible match to McDonald’s authentic taste.
Next, he added one-fourth of a cup of sweet pickle relish, followed by two tablespoons of Düsseldorf mustard. After that, he recommended mixing in one teaspoon of white wine vinegar.
For the fifth ingredient, Mike added one-fourth of a teaspoon of regular paprika, making it clear that smoked paprika should be avoided for this recipe.
The dry ingredients came next, essential for achieving the sauce’s signature flavor. He explained that one teaspoon each of onion powder and garlic powder should be used, but stressed that they must not be granulated.
The eighth ingredient was one-eighth of a teaspoon of white pepper, and Mike was firm about not substituting black pepper in the recipe.
He then added one-eighth of a teaspoon of sugar for a hint of sweetness.
To finish off the recipe, Mike included small pinches of turmeric and MSG, noting that these would enhance the umami flavor that’s so distinctive in the original sauce.
Once all 11 ingredients are in the bowl, he advised mixing them thoroughly. Mike also recommended refrigerating the sauce for 30 minutes before serving, with a final stir just before use.
In closing, the chef invited viewers to compare his D.I.Y. sauce to McDonald’s version, reiterating that his recipe is the most accurate thanks to his direct experience with the global fast-food giant.

Who Invented the Big Mac?
The Big Mac was created in 1967 by Jim Delligatti, a McDonald’s franchisee looking to offer customers a more substantial sandwich. Delligatti, who ran several McDonald’s locations in the Pittsburgh area, introduced the now-iconic burger at his Uniontown, Pennsylvania, restaurant on April 22, 1967, where it sold for just 45 cents. While Delligatti is celebrated as the mastermind behind the Big Mac, he admitted that his idea was inspired by the double-deck hamburgers that had been popularized by the Big Boy chain since the 1940s.
Initially, McDonald’s was reluctant to embrace the Big Mac, as the company’s streamlined menu of hamburgers and fries was already performing well. However, the sandwich’s popularity soared after its debut, leading McDonald’s to officially add it to their national menu in 1968.
The name “Big Mac” was coined by Esther Glickstein Rose, a 21-year-old advertising secretary at McDonald’s corporate headquarters. Today, the Big Mac has become a symbol of both fast food and American culture, with billions sold worldwide
